When I was in Ottawa for Nationals, we visited one of those diners-in-a-trailer type deals just outside the Canadian Tire where I picked up the new tire for my car. The little food mobile was run a French Canadian couple. Damn good poutine. Damn good I say!

Mayhaps try rendering some panchetta (or bacon), adding equal parts flour to whatever fat renders out (you can remove some of the fat if desired), then add a nice dark veal stock (or beef stock), and stir until nice and goopy. Strain and serve over some cheese curds and fries.

Maybe the slightest drizzle of truffle oil to take it over the top. Or wild mushrooms in the gravy. Or both. Mmm.

I was going to say add ground up hamburger to it... but sure truffle oil and wild mushrooms works too.
